The most tender cut of beef! Known and recognized for its legendary leanness and softness. Its buttery texture combined with its subtle flavor makes it an elegant and delicious meat to cook either in steaks or as a roast. You will occasionally see tenderloin roasted whole, but more commonly you will see it cut into individual cylindrical steaks about 2 1/2 inches tall, usually referred to as filet mignon, which means “small boneless steak” in French. Because tenderloin has almost no marbling or fat, it doesn’t have a lot of flavor, so it is usually accompanied by savory sauce.

Conocido y reconocido por su legendaria ternura, su textura mantecosa combinada con un sutil sabor lo convierten en una carne elegante y deliciosa para cocinar en filetes o a la parrilla. Ocasionalmente, verá el lomo asado entero a la parrilla, pero es mas común verlo cortado en filetes cilíndricos individuales de aproximadamente 2” 1/2 pulgadas de alto, generalmente conocido como “filete mignon”, que significa "filete pequeño sin hueso" en francés. Debido a que el lomo casi no tiene marmoleado o grasa, por lo que generalmente va acompañado de una salsa rica a gusto del consumidor.
