Eye Round is a boneless and lean cut of beef, coming from the well-used Round Primal muscle.

A popular and delicious way to cook it in Argentina is to make it in milanesas "Milanesas de Peceto". The other is like roasted in the oven that should be slow cooked to improve its tenderness and then sliced thinly across the grain.
